my fave fave fave

tonight i made my favorite easy dinner. i think it is my ultimate favorite dinner. the fact that it tastes so darn good coupled with the fact that it is super easy, is a recipe for success. wait a minute. before i tell you what this recipe is, let me digress for a moment...

i discovered today that we always have a good amount of food in our house, but it seems that it is never anything to make meals with. that is due to my lack of planning. shame on me. since i just shop the sales based upon what coupons i have, we end up with a whole bunch of mish mash. i've known this for awhile, but i just kept saying i'd figure out ways to just throw things together in hopes of it tasting good.

i have a lack of creativity when it comes to cooking. so, if i do anything in the kitchen outside of a recipe it most likely will end in failure, the throwing away of the meal, and having to run out for something cheap to replace the thrown away meal. pretty much a lose lose lose situation. i decided today that i must start making a weekly dinner menu. i will try to choose recipes based upon the weekly sales, but i am determined not to have an anxiety attack if i have to buy a few ingredients that aren't on sale or that i don't have a coupon for. pray for me. that will be no easy task.

back to my favorite... here's the recipe for chicken crunch. trust me, you're going to fall in love with it. it's also great because there aren't many ingredients which keeps the cost down!

Ingredients

  • 2 chicken breasts, cooked and deboned
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 (8 ounce) container sour cream
  • 1/2 cup butter
  • 40 buttery round crackers

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Chop chicken into small pieces and place in a 9 x 13 inch baking dish.
  3. Mix soup and sour cream and pour over chicken. Dot with butter or margarine. Crumble crackers finely and put on top of chicken mixture. Bake at 350 degrees F (175 degrees C) for 30 minutes.

I have the same exact problem! I wish I was better at menu planning. Thanks for sharing the recipe, it looks yummy and easy, both of which are very important!
