if your husband is like mine, a meal is not a meal without meat.
but, i'm on a diet and think meals are acceptable without meat... in fact, they're highly desirable.
this is what i've been eating as of late. kelly calls it rabbit food. i call it delicious.
blueberries + slivered almonds =
a perfect snack. the smooth buttery taste of the almonds pairs nicely with the blueberries.
whole wheat tortilla + pesto + cream havarti cheese + grape tomatoes + spinach =
the best lunch. the pesto adds amazing depth to each bite. and spinach? it's a superfood. need i say more?
whole wheat tortilla + spinach + scrambled eggs =
a protein powerpacked superfood breakfast.
basically, i'm all about eating as much spinach as possible (thanks to my friend la!). it's cheap and jam packed with goodness.

This is so funny! I eat spinach at least once a day and every time Chris sees me eating it he goes "supafooood" because I've told him that so many times.

I eat them almost EVERY morning in my cereal.
They are DELICIOUS in cereal when they are frozen.
I know it sounds weird, but it is seriously DELICIOUS!
It makes my soy milk SUPER cold, even slushy like!

as i read this post, i'm having a mixed berry smoothie...with spinach...for breakfast! can't even tell it's in there! we're trying to limit our 'added sugar' intake around here...just discovered a yummy 'sugar-free' dessert...frozen banana chopped up with melted natural peanut butter drizzled over the top-- very yummy, i hardly miss the ice cream (yeah, right!)! happy dieting!
I have one of those Hubby's too! Your wraps look wonderful, I need to start buying whole wheat ones, I'm sure they're tons better for you. Everywhere I turn people are telling me that the 2nd baby weight is so much harder to lose, and it has me sweating bullets. Guess I'll find my favorite diet food here soon enough!
Well, to put it lightly, if I ate that much spinach you wouldn't see me for a week b/c I'd be stuck in the bathroom. haha! I love blueberries and almonds (I actually prefer Walnuts). My breakfast normally consists of blueberries and granola with milk :) And for the record, my DH is the same way as yours-- gotta have some meat in there or he complains!
Oh yum! I'll have to try that blueberries and almond goodness soon :-) Favorite diet food? Well, how about "healthy" food (since I don't diet - nasty 4 letter word IMO). I love juicing and smoothies. You can pack all kinds of powerful goodness into a juicer or blender! Homemade V8 is one of my favs: tomatoes, cucumbers, peppers, (all from the garden), spinach, garlic, and oh my yumminess in a glass! And talk about energy!

YUM! Those all look super delicious, well I take that back, I DESPISE eggs!! Except for when used in omelets. Isn't that the weirdest thing?!

oh yeah. Gotta love those breakfast burritos! Especially with some spinach, tomatoes and peppers. That is one of my favorite breakfasts.
Have you tried bean paste? With salsa and a little cheese SO good! (I get the tostitos bean & queso dip YUM!)
My friend makes granola that has no sugar in it and it is delicious. It would go well with those blueberries. I should eat more spinach!

I read The Abs Diet for Women and followed it religiously after the birth of my first son. I lost the baby weight plus some!

ohmygoodness, Carissa, you've got me craving that food of yours! I love blueberries--when we get a container, I usually end up eating about half (or sometimes more--yikes!). And the pesto meal? Oh, my, you've already got me sold! I love, love, love pesto. So good. :-)

I eat a high fiber english muffin every morning with either poached eggs or low fat cottage cheese. Every morning!! Yours looked really yummy:)
I love fruit. A salad, yogurt, or a baked potato can make a meal for me. Not hubby! He needs a huge meal and lots of meat. My favorite way to diet is just to cut down on carbs and not eat past 6pm. You couldn't really go without eating at night if you're nursing though.
my husband and his best friend consider themselves 'meatatarians.' it isn't a meal w/out meat. i can take it or leave it though so all of those look absolutely delightful to me!
have you ever heard of a green monster smoothie? It's a smoothie w/ spinach in it. Just put spinach in the bottom of the blender (like a cup or two) then whatever kind of fruit you want and some milk or soy milk and blend! It looks gross but it's really good for you and you can't taste the spinach!!

I love the pesto/whole wheat tortilla lunch. I will have to get the ingredients for next week! I'm with you on the blueberries and spinach. I also love yogurt with granola.
Seriously love all those foods! I also eat spinach almost everyday but most days its with whole wheat pasta and parmesan cheese.
My latest favorite "diet" food is almond milk! It is so good and makes great smoothies.
I love all of those, yummy! My husband is the same way, the meal MUST have meat in it to be a meal. Men! I love a whole wheat wrap with spinach and tuna made with a little Evoo hot sauce and pepper! It's good if you like tuna (and cheap)
We eat "pesto pasta" once a week I just cook up some chicken, cook whole wheat bowtie pasta, add a jar of pesto (or make your own), add zucchini or whatever veggies you like, let it cook on low for a few minutes and add some parmesan cheese at the end. Major Yum!
That whole wheat tortilla/pesto dish looks fantastic! Diet foods...hmmm...I don't like to think of them that way. LOL...more like healthy foods - I'm weird...haha...but I love salads, yogurt & fruit. :)

stuffed french toast (300 cal..less if you use light bread)
2 slices whole wheat bread
1 tbs cream cheese, fat free
1 tbs slivered almonds
2 tsp strawberry fruit jam (or fav flavor)
2 tbs liquid egg sub
2 tbs fat free milk
6 strawberries sliced
spread 1 side of bread w/cream cheese and sprinkle evenly w/almonds. spread other piece of bread w/jam. Place both together to form sandwich. Whisk egg sub and milk in bowl. dip each side of sandwich in mixture. cook over med-low heat. garnish w/strawberries!
I want a bowl of blueberries and almonds now.
hmm...if that is what diet food is, then no wonder I'm not losing weight.
I'm guessing oreos don't count.
Your pics look amazing! I am all about the girly food, though my husband is too. Meat is just too expensive, so we don't eat it every day. I have been loving those frozen yoplait smoothie mixes that you just blend up, and I also love a wrap that is just about identical to your tortilla up there. I cannot get enough pesto! All this talk makes me hungry...
Oh! All that stuff looks so yummy! I love whole wheat tortillas...we eat them like crazy around here. and spinach too. I love the extra crunch it gives my sandwiches.
I am watching what I eat too. One of my favorite breakfasts is only 4 weight watcher points. I cook an egg white and toast a whole wheat english muffin and top with a slice of cheese. I'm loving it and it has no meat, unless you count egg as a meat.

We love blueberries at our house (gotta be hard, not squishy!) and we have made the switch to healthier torts in many different forms (so many choices now). Believe it or not, I have never tried pesto. Seems like it is a must now. Your wraps look so good!
We are house sitting again and have lots of Craisins and walnuts available. Yummy mix. One of my all time favorite healthy things is still a parfait, though. Remember these?

I have been veg for about 10 years and recently dedicated it to the Lord as a fast, for as long as I feel led to continue (and at this time I have no reason to believe that will ever happen), or unless some medical reason comes up that requires me to stop.
I eat a large bowl of citrus fruit for breakfast. Later on in the day, I have such things as chickpeas and lentils in various types of tomato sauce (all natural of course - and sometimes I throw in some fresh herbs from the little garden I keep on my balcony), and whole wheat pasta with pesto (red or green). And for dessert, I have some sorbet with lots of fruit on top (I have taken to filling my freezer with berries so I can have them year 'round).
I'm a busy woman, so normally I like to keep it simple. But if I'm feeling really ambitious, then I can make myself, for example, some Indian curry (with chick peas and or lentils) on brown rice, or a salad. I have some veg cookbooks that I look to for inspiration, and so far they have yielded such niceties as a salad with corn, tomatoes and red hot chili peppers with a citrus vinaigrette on top (which I can put over spinach or arugula or some such if I feel the need for something leafy and green).
I used to eat yogurt, a LOT of yogurt, but then I got a cholesterol scare (and apparently high LDLs run in the family, so I have to be careful). Once I cut that out, I more or less effortlessly dropped about 45 pounds. It appears that, on the one hand, all I have to do is look at milk products, and I start to gain weight; but on the other, if I cut them out, I lose weight immediately.
And once I shifted from cakes with cream in them, ice cream, etc. to the fruit and sorbet, well, now I have to think about eating *enough*! Which is nice, because then I can eat as much as I like - provided I drink lots of water with whatever it is :D
PS I mean, of course, that I have no reason to believe I will ever feel led to *stop* fasting :)

My mom really likes thinly sliced turkey with whole basil leaves. It's pretty good. My new favorite is greek yogurt + honey. It is beautiful and delicious. I also like raisins and almonds - not very original but still yummy :)
Those look delicious! I've been trying to not only lose weight but just eat healthier overall. It's a pretty hard task at times! I'll have to try some of your concoctions. My favorite diet food is salmon (a meat - but one of the better ones!) and squash. Tons of squash! :)
