diet diary (extended edition)

first, let me just confess that i feel a bit shallow writing about weight loss and exercise.  after being completely engrossed in the mine rescue, it changes your perspective a bit on life... how quickly it passes, what is most important and how the way that you live matters for eternity... i know those miners had a chance to reflect, re-examine and re-evaluate; i'm guessing they'll never be the same.  for seventeen whole days those men wondered if they'd be brought back to life.  and now sixty-nine days later they were; what a miracle!

now on to lesser things.  i'm no fitness expert.  i've lost baby weight one time around, now i'm working on it the second time around.  some of you have asked what i'm doing.  well, i don't really know what i'm doing... you could say making it up as i go and simply trying to figure out what gets results.  

as far as dieting, since i'm nursing, i haven't been able to do a full fledge diet.  but, i am focusing on eating completely healthy, with a few desserts thrown in for good measure. -  sage likes them; it's her fault.  ; )  my favorite healthy meals are fajitas (chicken, loads of bell peppers and whole wheat tortillas), anything involving spinach, and turkey sandwiches on sandwich thins.  i try to keep a mental weight watchers point count of 15-20.

my new favorite salad... spinach, rapsberries, mozzarella cheese, all topped with a raspberry vinaigrette.  i'm sure it's on some menu somewhere, but i like to pretend i invented it.  

exercising.  i'm a bit addicted.  you release the same endorphins exercising as you do eating chocolate.  i tell myself i'll feel like i just ate chocolate if i go and run for an hour.  most of the time i do my beloved workout videos. - they are so convenient and i have them memorized (to some people that would be a negative, but i like to know what's coming and even more, i like everything to be planned and planned some more!).  i have "slim in 6" and "30 day shred." i prefer a 30 minute workout;  i find that if i am going to exercise longer than 30 minutes, it's easier to come up with excuses not to do it.  if i know it will only take 30 minutes, then it doesn't seem like such a time eater upper.  i would love to do more, but after all, it's more important that i take care of my family.

the results:  i've lost 20 pounds in the last 11 weeks.  i have 5 more to lose to be back to my original weight.  finally my clothes fit again and it's nice... i was getting tired of wearing the same outfit everyday.  : )  it's definitely harder losing weight after baby #2, and harder since i had two babies within 16 months, but all way more than worth it!

i'm a much more pleasant person if i'm well rested, eating well and exercising... honey appreciates that.  but most of all, feasting on the Word makes all the difference.

I'm sure you invented it--ha! Looks delicious. I love spinach, which is kind of an oddity. And fajitas are a favorite over here...well, at least for me. I actually asked my mom if we could have them, and she replied, "We had them a couple days ago." I'll just tell her that Carissa likes 'em. :) Congrats on your weight loss! I've felt so lazy and unhealthy since I've been off of dance. It was so nice to go back for class (partially)! :)

Mmm, that salad does look good! I have heard from so many that the 2nd baby weight is harder to lose, but I'm determined! I hope it comes off as easy as the 1st, but you know... I'll take what I can get!

You're such an inspiration! It is refreshing to see someone going about losing weight the healthy way. I am about losing my mind not being able to exercise. The release of endorphins keeps me in a happy place :) Without that, I am MOODY! Kudos to you for all of your effort. A happy mommy equals a happy home!

Carissa, that's awesome!!! I am celebrating your successes with you...what an inspiration! I too love workout dvds - I've never done Slim in 6, but I love the Slim Series. Turbo Jam is fun too! You are a beautiful girl, and you are rockin out this mom of 2 thing!

That is SOOOO awesome! 20 lbs? Wow...that's a good loss! I did Slim in 6 years and years ago and it worked. It was so long ago that it was in VHS tapes. Haha. Anyway....this has definitely inspired me to get moving! I NEEEED to loose weight! High five to you! :)

Mmm, rasberry dressing on spinach is so good! I always top mine off with raisins and cucumbers. Seems like a weird mix but I definitely like it!

20 pounds- that is amazing. Get it, girl!

Way to go, Carissa! Good job for being so disciplined and sticking with it!

I know you've got to be POOPED at the end of the day, yet you still find time to work out. I don't really do much... i sit at a desk and find myself tired hah... so you're going to be my new inspiration!!! :)

oh my goodness.... YUMMY is all I can say about that salad! I love to exercise too! I've been on the treadmill for 2 miles every morning for the past month - but it can get boring even with music. So I decided to alternate it with the 30 day shred. I love hearing Jillian yell at me that she wants me to gurgle my heart! hahaha
