i have been in a funk. the kind where you sort of know why (and the reasons may be valid), but sort of want to tell yourself to get over it, be a big girl, quit being selfishly faithless, and just plain trust the Lord. my honey prayed for me and recited all the ways the Lord has been faithful to us in the past. - if i want to feel overwhelming love, kindness and unending grace, i must dwell on these things. i think it's part of renewing your mind and taking your thoughts captive. it helps keep my sporadic vagabond brain from drifting into fruitless lands.
on a much lesser degree, there's something else that really cheers me up... my kids actually eating the meal i prepared without a fight. on normal occasions, they come armed for food battle with their ridiculously cute smiles and endless pleadings to be finished without even tasting anything that rests on their plate. but yesterday was different. yesterday was glorious. meal time was easy... it was a miracle of sorts... my kiddos cleaned their plates at lunch and dinner. which meant one thing. a celebration was ON.
and thankfully, i was equipped and ready with chocolate chip cookies of the egg free variety, the only kind this house allows.
finally, thanks to this box stuck in the 70's but really only bought a few days ago at the grocery store, our chocolate chip cookies tasted normal for once. not flaxy, not vinegary, but normal. for the first time we didn't miss the eggs. egg allergy ridden people rejoice! there's serious hope. i've tasted it.
it took only two big try to shove it all in your mouth at once bites for him to finish. he's never tasted such a tasty treat.
paired with the egg free victory powder, this recipe now holds the ticket to my chocolate shaped heart. it is the perfect pairing of crunchy, cakey and soft along with a not-too-flour-y or not-too-sugary balance. i can now proclaim like the rest of the world, that i have the best cookie recipe in existence.
i have a very useful (wink, wink) degree in political science, i am one of those odd weirdos that enjoys the political scene. in fact, i recently declared to my friend that george w. bush most assuredly would have a crush on me instead of her, just because of my diploma. ; ) i don't always enjoy cooking; so in an almost genius moment, i bought this cookbook a long time ago in hopes of it helping me relish the kitchen. years later, i can't say that it livened up my cooking time much, but it's totally worth the buy just for these bad boys. chocolate chip cookies are also really good at taking my blue-colored, gloomy glasses off. : )
Chelsea's Chocolate Chip Cookies
by Walter Scheib
*1 large egg (or EnerG egg
replacer!)
*1 stick (1/2 cup) butter, softened
*½ cup granulated sugar
*½ cup granulated sugar
*1 teaspoon pure vanilla extract
*1 ¼ cups cake flour
*½ teaspoon salt
*½ teaspoon baking soda
*1 ¼ cups semisweet chocolate chips
1. Preheat the oven to 350°F.
Grease two cookie sheets.
2. In a large mixing bowl, cream
the butter, brown sugar, and granulated sugar together for 2 to 3 minutes. Add
the egg and vanilla and mix well.
3. Sift the flour, salt, and baking
soda together, add to the mixture, and blend well, then stir in the chips.
4. Place the dough in 2-tablespoon
portions onto the cookie sheets, leaving 2 inches between the cookies.
5. Bake until lightly golden brown,
8 to 10 minutes. Remove from the oven, let cool briefly in the pans, and serve
warm or at room temperature. Makes about 24 cookies.

Lilac and Grey
Yum, they look good! So glad you found the egg sub!
Have a great weekend!
Why is it that kids hate the food we cook? Every once in a while Cora will surprise me and eat something crazy...like cauliflower. But then things I think she'll eat like rice get pushed away. Sometimes I wonder what she survives on because I don't really feed her much outside of what I offer her. Those cookies look really good!
What a blessing to have your husband remind you of God's Truth and faithfulness. And those cookies.. of my, yummy!
nice job with those cookies...that'll get anybody feeling good ;) and that box IS quite retroish...maybe a marketing update is in order??
I am beyond excited for you that the egg replacement worked in your cookies!!! Hooray for chocolate chip covered faces:-)
yes, renewing my mind and replacing my thoughts with those from His Word, I am right there with you. praying with and for you, friend.
recounting ways God has been faithful in the past always always pulls me out of a funk. it gives my heart the little reminder that i need to know it's all gonna be okay. He's never failed us...not ever! the key for me is remembering to do that;)

I have heard of that egg replacement. I'm glad it worked out so well for you, I will have to try it! (Pancakes that don't taste like flax? I'm not sure what I will do w/myself! ;-D).

Hey Carissa! Just found your blog via Chelsea's Blending Life Seamlessly. She quoted your first paragraph in her recent post. I thought it was so beautiful that I just had to check out your site. Thank you for sharing God's love through your blog and I'll be looking forward to your new posts!
Thanks for sharing the recipe - they look scrumptious. Particularly like the expression on your little ones face while he's devouring his treat.
love that first picture of you... gorgeous! and the cookies look sooo good too :)
You know what? Chocolate chip cookies are just good for the soul. It's a fact.
By the way - the photo of you is breathtakingly beautiful! Do you model?
These look delicious!! And that picture of your boy with the cookie is precious, love it!
I'm pretty sure we all need/have to be reminded of God's faithfulness. He has proven to be so, so faithful to me these past 3 months and my trust and faith in Him is at an all time high. Now, if I can just keep it there. Satan stands on the sidelines anxious to plant doubt and anxiety and rob us of our joy. May you be blessed with an especially great week!
Those cookies look amazing! I really want some :) I have been a funk recently, different from yours like knock-you-off-your-feet-funk. I found the only and the best way to subdue myself was to take the spotlight off myself. When I get anxious and blue I pray and I almost instantly have amazing peace, I have prayed for almost everyone I have ever met. Such amazing things happen through prayer
Mmm, AMEN about recounting his faithfulness. Sometimes it's the only thing that lifts the fog. Knowing that He'll never leave us "begging for bread" in the literal or spiritual (emotional, physical, etc!) sense.
I think chocolate chip cookies made with cake flour have a special something to them! So glad you got to taste the real deal. ;) Hope you have a fabulous week, friend.
Okay, my beautiful friend, you look amazing. Lovely, lovely lovely picture.
And the cookies? They look amazing as well. I'm going to be trying this recipe -- adapting with gluten free flour -- because they look so good. And, of course, because you recommended it.
Thanks for linking up. Always grateful for your bloggy love!
Blessings sweet friend of mine.
Rachel
