miscellany monday

write random and join in below.

1. it's treat time! this is Serendipity's of NYC recipe and i about fell over when i found it. then i made it and went to heaven. a few notes: you can substitute almond milk for evaporated milk. it's not as smooth and creamy, but it's healthier and less fattening. also, i bypassed the double boiler (who has time for that?!) and just melted everything in a pot. - it turned out great!


Frozen Hot Chocolate, adapted from: Tasty Kitchen, here
3 tbsp granulated sugar
3 tbsp hot cocoa mix
2 tbsp unsalted butter
1/3 cups semi-sweet chocolate chips
1/3 cups white chocolate chips
12 ounces evaporated milk, divided
4 1/2 cups ice
whipped cream, to taste
mini marshmallows, to taste
combine sugar, cocoa mix, and butter in the top of a double boiler that is set over gently boiling water. stir often until melted and a smooth paste forms. add semi-sweet and white chocolate chips; stir. as chips melt, slowly stir in 1/2 cup of evaporated milk. stir until smooth. cool to room temp. combine chocolate base mixture, the remaining evaporated milk and ice in a blender. blend until smooth. pour into frosty glasses. top with whipped cream, marshmallows and chocolate chips, if desired. enjoy!

3. trader joe's eggplant cutlets. cheap. healthy. delicious. easy. quick. need i say more??


4. took this beautiful family's pictures on friday evening. downtown Charleston doesn't disappoint.



5. i scored myself this fine assistant for the friday night family session. he was the best sherpa money could buy. only he was free. even better!


6. excuse the stinky phone photo... but this is worthy of a mention. and an invention. this is Hunter's own creation. he sure was thinking of us mama's. it's a RACECAR VACUUM!!! i said, "you mean it zooms around the house super fast vacuuming the floors?!!" he said, "yes!" then i kissed him and wished it were true.

7. shot a lovely church wedding on Saturday.  also, this is a phone photo. sometimes i am in love with an iPhone's photo taking. move over Canon. ; )

8. and one more. because i couldn't resist!

  5. Girl, you are a busy, busy photographer these days and I sure understand why. You take the BEST photos! Sage and Hunter are so adorable and make my heart smile every time I see their pics.

    The church steeple, how cool, with an IPhone. WOW!

    I can't believe TJ has 'eggplant cutlets' - they look breaded. I thought I came up with breaded eggplant on my own! hahahahaha I call them eggplant 'chips' in an effort to get teenagers to eat them. Pretty yummy, at least I think they are. If you can ignore that tiny, slight, very brief slimy-ness...

    Now your gonna make me bust out my big can of Serendipity 3 Iced Hot Chocolate and make some lol! My friends recently went to NYC and they know that not only is that my remission gift to go there when I get in remission but Serendipity is one of my all time favorite movies sooooo they brought me back a big can of it from the actual restraunt whoop! whoop! On the can it says you can be an angel without alcohol or get a little devilish and add a bit of alcohol lol! I bet this recipe rings true to it I will look at the back of my can on the ingredients and let ya know lol! OK smooshy faces and all that cuteness is making me smile from ear to ear! I can't help but notice your camera strap lol! I know I'm wierd ha! So were did you get it? I love it, do tell ha! That's awesome Kelly came along to help with the photos! I have noticed my IPHONE takes amazeballs pics as well! I love that you are using your calling and shooting family photos and weddings! You are really good at it and seem to have an eye for scenery! Very proud of you girl and I miss you so very much!

  15. Did Trader Joe's get you with the eggplant sample too!?!?! I brought them home and Ben said he hated eggplant. Turns out he likes it just fine :) Did you top it with the marinara and parm!?!?! Delish!

  26. question: for the frozen hot chocolate - you mention substituting the condensed milk at the top of the post for almond milk---but the ingredient list shows evaporated milk--there is a HUGE difference between these two ingredient.

    Which "milk" is the correct milk to use--evaporated or condensed?

  27. @kelli p - the recipe calls for evaporated milk. but, i did try it with almond milk instead of evaporated milk. it tastes good, just not as smooth and creamy!

That frozen hot chocolate looks amazing! :D But, as I was scrolling down I was admiring your family photos and I said to myself, that looks like Charleston, then I read that it was!
